The list

  • Ball and table games: basketball, pool, mini-golf.
  • On water: scuba, fishing, jet skis, kayaks, airboats (Airboat).
  • On wheels: track and street racing, car meets, dirt bikes.
  • In the air: base jumping.
  • Nightlife: clubbing, in Vice City.
  • Fitness: a gym with San Andreas-style body changes. Reported
  • Animals: a zoo, and petting dogs, which nudges the Criminal Profile.
  • Fighting: a timed gun-range challenge (Shooting and combat), and a backyard wrestling ring.

Where

Hunting, fishing and off-roading are what Rockstar lists for Mount Kalaga National Park (Hunting and fishing). Airboats belong to Grassrivers; scuba and boating to the Leonida Keys.

Rockstar names hunting and fishing for Mount Kalaga and a tiered, trackable wildlife system, but has not shown how either plays.
Airboat
The airboat is a confirmed vehicle class, built for the sawgrass wetlands of Grassrivers.
